A "full-bodied" white wine is distinguished by its viscosity and persistence. This profile is usually the result of three critical factors: grape ripeness, varietal (such as Viognier or Sémillon), and cellar techniques. According to the OIV, processes like malolactic fermentation transform malic acid (pungent) into lactic acid (creamy), radically altering the wine's texture.

Another pillar is battonage or lees stirring, where contact with yeasts contributes compounds that increase the sensation of volume. These wines, unlike young white wines, possess aging potential that can extend for years, developing notes of honey, dried fruits, and sweet spices.

Reference Varietals

Chardonnay

White Wine in Fine Dining

Unlike light white wines, these wines require dishes with a higher fat content. Serving temperature should range between 10°C and 12°C. A common mistake is serving them too cold, which "numbs" the taste buds and hides the complexity of oak and ripe fruit.
