Dominio del Linze: Great Cult Wine

Dominio del Linze

"The mystical preservation of pre-Hispanic and pre-phylloxera vineyards. A living oenological heritage on the Spanish plateau translated into elegance, complexity, and unique personality."

1. Dominio del Linze: The Pre-Phylloxera Legacy of Spanish Wine

The oenological proposal of Dominio del Linze protects old plots that miraculously escaped the phylloxera plague at the end of the 19th century. Being planted in very arid, sandy, and high-altitude soils, phylloxera could never prosper, allowing the native vines to remain on their own original roots (pie franco or "direct") without the need for American grafts.

The winery stands out for cultivating the ancestral grape Tinto Velasco (also locally known as Frasco), an indigenous variety with a long cycle, very low yields, and vibrant acidity. The result is author's red wines with a unique aromatic profile, combining concentrated wild fruit, mineral hints, and an exceptionally polished tannic structure.

2. Artisanal Production and Cave Aging

Viticulture at Dominio del Linze is governed by principles of ecology and absolute respect for the environment. No synthetic pesticides or fertilizers are used, respecting the soil microbiome and the native flora surrounding the vineyards.

Grapes are hand-harvested in small boxes and undergo a rigorous selection table. Fermentation takes place with indigenous yeasts in stainless steel tanks or wooden vats. Subsequently, the wine rests for long periods in selected French and American oak barrels, where it undergoes malolactic fermentation and refines its tannins without losing the fruity character of the Tinto Velasco variety.

3. Sensory Expression, Serving, and Pairing

Organoleptic Profile

In the glass, Dominio del Linze wines stand out for their deep garnet red color. The nose reveals complexity with layers of black fruit (blackberry, cranberry), thyme, rosemary, black pepper, and very elegant smoky notes. On the palate, it is concentrated, with excellent supporting acidity and a long finish with balsamic undertones.

Recommended Serving and Pairing

It is recommended to serve between 16 °C and 18 °C and decant at least 30 minutes before consumption to allow its aging aromas to open up. It ideally pairs with grilled cuts of meat, venison or wild boar stews, dishes based on wild mushrooms, and aged cheeses.

4. Frequently Asked Questions about the Dominio del Linze Collection

What differentiates Dominio del Linze from industrial reds?

Dominio del Linze is an author's project with very limited productions. It has a deep garnet color, with notes of ripe wild berries, black pepper, balsamic, and very fine-grained tannins from ungrafted, pre-phylloxera centenary vines.

What does it mean for a grape to be "own-rooted" (Pie Franco)?

It means that the vines are planted directly in the soil on their native roots without using American rootstock grafts, preserving the pure and original genetics of the plant prior to the phylloxera epidemic.

What is the potential aging time for this wine?

Thanks to its noble tannic structure and natural acidity, Dominio del Linze evolves favorably in the bottle for 10 to 15 years when stored in ideal cellar conditions.
