02. Methods and Sugar Levels
Traditional Method and Charmat Method
In the traditional method (Champagne, Cava, Corpinnat) the second fermentation happens in the bottle itself and the wine rests on its lees: it adds notes of brioche, toasted bread and dried fruit, with a creamy texture. In the Charmat method (Prosecco) it happens in pressurized steel tanks, and preserves the fruity and floral aromas of the Glera grape.
Brut Nature, Extra Brut and Brut
Residual sugar defines the style. Brut Nature: less than 3 g/L and no dosage. Extra Brut: between 0 and 6 g/L. Brut: up to 12 g/L, the most versatile. The driest go very well with oysters, ceviche and sushi; Brut, with poultry, creamy cheeses and appetizers. For desserts, Extra Dry and Demi-Sec.
Rosé and Blanc de Blancs
Sparkling rosés offer red fruit and good versatility at the table. Blanc de Blancs, made 100% from white grapes (Chardonnay), have citrus minerality and vertical elegance.

What is the difference between the traditional method and the Charmat method?
In the traditional method (Champagne, Cava) the second fermentation happens in the bottle itself and the wine rests on its lees, adding notes of brioche and dried fruit. In the Charmat method (Prosecco) it happens in pressurized steel tanks and preserves the fruity and floral aromas of the grape.
What do Brut Nature, Extra Brut and Brut mean?
They indicate residual sugar: Brut Nature has less than 3 g/L with no added sugar, Extra Brut between 0 and 6 g/L and Brut up to 12 g/L.
At what temperature should sparkling wine be served?
Young sparkling wines and Charmat-method wines, between 6 °C and 8 °C; long-aged Champagnes and Cavas, between 9 °C and 11 °C. A tulip-style glass, more than a narrow flute, concentrates the aromas better.
