The Oenological Architecture of Pinot Noir
Pinot Noir is, genetically, one of the oldest and most mutable varieties known to man. Its "pine cone" morphology, with tight clusters, makes it extremely susceptible to rot and temperature changes. However, according to the OIV (International Organisation of Vine and Wine), it is this very fragility that allows for unique terroir transparency: the wine becomes a liquid map of the soil where it was grown.
In Italy, excellence is found in the north. In La Cava Shop's collection of Alto Adige wines, we find examples that rival the best Premiers Crus of Burgundy. The use of altitudes exceeding 500 meters above sea level ensures that the grape retains its natural acidity and an aromatic palette of tart red fruits and forest floor notes. Geology and Flavor
Calcareous marl and schist soils are preferred by this noble grape. These minerals provide the silky tannic structure and verticality that characterize our premium red wines. Pinot Noir does not seek alcoholic power, but rather the persistence of freshness.

Serving and Tasting Temperature
To appreciate the aromatic verticality of the grape, it should be served strictly between 14°C and 16°C (57°F and 61°F).
