Anís Dulce Las Cadenas

Destilería Hijos de Pablo Esparza • Navarra

"The emblem of the Navarre distillery since 1872. A distillate that captures the essence of aniseed through ancestral processes in direct-fire copper stills."

History and Legacy of Villava

Founded by Pablo Esparza in the 19th century, the Hijos de Pablo Esparza distillery is one of the pillars of the spirits industry in northern Spain. Anís Las Cadenas owes its name to the historic chains of Navarra, and its recipe remains unaltered, using exclusively agricultural alcohol and selected Pimpinella anisum seeds.

This product is part of the prestigious tradition of Spanish aniseed liqueurs, a sector regulated by the Spanish Ministry of Agriculture that guarantees the quality of artisanal maceration and distillation processes.

Tasting Notes and Technical Profile

Visual and Chemical

Colorless with a diamond-like brilliance. It has a high glycerine density due to its sugar content. When mixed with water, it produces the famous Louché Effect, a phenomenon documented in Difford's Guide that demonstrates the purity of its essential green anise oils.

Palate

Sweet and velvety attack. The alcohol is perfectly integrated, allowing herbaceous and sweet spice notes to dominate the aftertaste. It is a fundamental pillar in the category of premium digestives in our cellar.

Consumption Rituals

Anís Las Cadenas Dulce is versatile by nature. It can be enjoyed neat in a liqueur glass at room temperature or chilled. In Mediterranean culture, it is the base for "Palomita" (one part aniseed to three parts cold water), ideal as a refreshing aperitif.

Furthermore, it is an irreplaceable ingredient in traditional baking for preparing rosquillas, pestiños, and bizcochos. If you wish to explore other similar profiles for your cocktail making, we recommend visiting our section on liqueurs and spirits.

Traditional Distillation Process

The production of Anís Las Cadenas follows a double distillation method in direct-fire copper stills, a technique the distillery has preserved since its founding despite the availability of more modern technology. The first step macerates green anise seeds in neutral alcohol for several days, allowing the essential oils to dissolve completely before distillation. This artisanal care is what distinguishes Las Cadenas from industrial versions that resort to synthetic essences, guaranteeing an authentic expression of Navarre green anise in every bottle.
