Explore Sparkling WinesThe Magic Behind the Bubble
The pop of a cork is the universal prelude to joy. Our selection of sparkling wines runs from French Champagne to Veneto Prosecco, including long-aged Cavas and New World sparkling wines. One example: the Naverán Perles Roses Rosé Cava, an organic Pinot Noir brut.
The quality of a sparkling wine shows in the fineness of the bubble and the persistence of the bead, the column of bubbles that rises in the glass. Both depend on a well-controlled second fermentation that turns a still base wine into a sparkling wine.
At La Cava Shop we store every label in climate-controlled cellars so it reaches your table with its freshness and balance.
Categories and Production Methods
Traditional Method or Champenoise
This is the method of Champagne, Cava and Crémant: the second fermentation takes place inside the bottle itself and the wine rests for months or years on its lees (yeasts). Yeast autolysis adds aromas of brioche, toasted bread, butter and dried fruit, and a creamy texture.
Charmat Method
This is the typical method of Veneto Prosecco: the second fermentation takes place in sealed, pressurized stainless steel tanks. It preserves the grape's primary aromas (Glera or Moscato) and gives young, fruity, floral and light sparkling wines, ideal for cocktails like the Aperol Spritz or for fresh aperitifs.
Rosé Sparkling Wines
They are made with a short maceration on red grape skins or, only in Champagne, with a blend of red wine. They use Pinot Noir and other red grapes and offer strawberries, raspberries and redcurrants. They are very versatile at the table: they go well with salmon and tuna tartare, poultry, fine charcuterie and berry desserts.

Temperature
Serve between 6 °C and 8 °C. A higher temperature releases CO2 too quickly and flattens the bubble. A tulip glass, more than a narrow flute, concentrates the aromas without losing fizz.
Opening Safely
Keep your thumb on the cage. Remove the wire, tilt the bottle at 45 degrees and turn the base of the bottle (not the cork) until the pressure is released with a subtle sigh.
Expert Questions (FAQ)
What does 'Brut Nature' mean on a label?
It is the driest style of sparkling wine: no sugar is added after disgorgement and it contains less than 3 grams of sugar per liter.
What is the difference between an Extra Brut and a Brut Champagne?
It lies in the residual sugar: Extra Brut contains between 0 and 6 grams per liter and has more marked acidity; Brut allows up to 12 grams per liter and is the most popular style.
How long can a sparkling wine be kept?
Most non-vintage sparkling wines are ready to drink when they reach the market and are enjoyed within 1 to 3 years. Vintage Champagnes or Gran Reserva Cavas can evolve in the cellar for a decade or more.
