"From the volcanic slopes of the Golan to the limestone terraces of Jerusalem: five distinct regions rewriting, in just four decades, the ancient history of Israel's wine."
1. A Four-Decade Winemaking Renaissance
Israel's modern viticulture was restarted in the late 19th century thanks to the support of Baron Edmond de Rothschild, but it wasn't until the 1980s, with the birth of the Golan winery, that the country began planting international varieties at altitude and applying precision oenology. Today, Israel cultivates five regions with radically different personalities, recognized by specialized sources such as Israeli Wines and the OIV.
At La Cava Shop, we curate an extensive collection of Israeli wines, almost all produced under kosher supervision, with free shipping on purchases from $1,499 MXN or a flat rate of $99 MXN on smaller orders.
2. The Five Regions of Israel
Upper Galilee
The heart of Israel's serious reds. Its altitude, cool nights, and limestone soils produce Cabernet Sauvignon and Bordeaux-style blends of great structure and retained acidity. Wineries such as Barkan and Binyamina produce Reserve labels of Merlot, Shiraz, and Cabernet Sauvignon here.
Golan Heights
The coldest zone in the country, with basaltic volcanic soil at altitude, ideal for heat-sensitive white varieties like Chardonnay, Sauvignon Blanc, and Riesling, as well as precision Cabernets. It was here that the modern era of Israeli wine began in the 1980s. Labels like the white wines from Teperberg Vision reflect that fresh and mineral profile.
Judean Hills
Limestone terraces near Jerusalem that favor elegance and minerality over power, inspired by Bordeaux and Rhone varieties. Boutique wineries like Psagot and Tzuba—with its Cabernet Sauvignon and Metzuda blend—are flagships of this region of growing prestige.
Samson and Mount Carmel
The historical cradle of the modern industry, reactivated in the 1880s with the support of Baron Edmond de Rothschild. Its warmer climate and lower altitude produce generous, round reds, such as the Merlot from Zion Capital or the Merlot from Tulip.
Negev
The boldest region: a desert where drip irrigation and extreme temperature fluctuations concentrate aromas and intensity in the grape, resulting in wines of singular character that challenge the traditional idea of where quality vines can be cultivated.
3. Varieties and Kosher Style
Most of the Israeli wineries in our catalog—Barkan, Psagot, Binyamina, Tzuba, Tura, Tulip, and Teperberg, among others—produce under kosher supervision, which implies rigorous control at every stage of the process in accordance with Jewish law (kashrut), without affecting the oenological quality of the resulting wine.
Varieties are dominated by Cabernet Sauvignon, Merlot, and Shiraz for reds, and Chardonnay and Sauvignon Blanc for whites, as well as fresh rosés like the Amuka Rosé by Or Haganuz, ideal for the Mexican climate.
4. Frequently Asked Questions about Israeli Wines
Are all Israeli wines kosher?
Not all, but the vast majority of export wineries are, given the weight of the global Jewish market. In our collection, most of the labels have kosher certification.
Which region should I choose if I am looking for a structured red?
The Upper Galilee and the Judean Hills are the best bets: the former for its power and tannic structure, the latter for its elegance and minerality.
What is the ideal serving temperature?
Reds from Galilee and Judea should be served between 16°C and 18°C; whites from the Golan between 8°C and 10°C; and rosés between 8°C and 12°C to highlight their freshness.
