The Strength of the North

Located in Kibbutz Ein Zivan, Matar Winery takes advantage of the unique conditions of the Golan Heights. At an altitude of 1,000 meters above sea level, the vineyards grow on volcanic basalt soils that provide exceptional minerality and depth.

The thermal contrast of the Golan allows for slow ripening, preserving the acidity that critics from James Suckling have highlighted in the winery's scores. Under the direction of Tal Pelter, Matar has redefined the standard of wines with Kosher certification in the region.

Volcanic Terroir: Basalt and Minerality

The soil of Ein Zivan is rich in basalt. This geological composition is what gives Matar's reds their nerve and longevity.

Aging in French and American Oak

Matar Winery combines fine-grained French oak barrels with hints of American oak, allowing Syrah and Cabernet Sauvignon to develop a complex tannic architecture without losing the mineral freshness of the volcanic soil.
