TABOR
ADAMA MERLOT

GALILEE • ISRAEL • VOLCANIC SOIL

"The nobility of the earth: a Merlot born in basalt soils to offer incomparable silkiness and exceptional fruit freshness."

★ ★ ★ ★ ★ | 4.8/5 (21 ENTHUSIASTIC REVIEWS)

The Silky Expression of Basalt

The Adama (Earth) series from Tabor Winery explores the intimate connection between the vine and the subsoil of the Upper Galilee. This Merlot comes from vineyards planted in basaltic soils, whose porosity and mineral richness allow for balanced ripening. The result is a wine that challenges varietal stereotypes: it is silky and amiable, but with a core of volcanic energy and a freshness that invites further drinking.

1. Identity Profile

Winery: Tabor Winery.

Origin: Galilee, Israel.

Varietal: 100% Merlot from selected parcels.

Aging: 12 months in French oak barrels.

Status: Kosher Non-Mevushal.

Alcohol Content: 14% Alc. Vol.

Presentation: 750 ml

2. Sommelier's Notes (Sensory Experience)

Appearance: Deep ruby red color with vibrant purple highlights. Clean and bright appearance with slow legs.

Nose: Seductive aromas of ripe forest fruits such as raspberries and black currants, intertwined with cocoa, sweet spices (vanilla, clove) and a distinctive hint of graphite and volcanic mineral.

Palate: Smooth and velvety entry. The tannins are round and polished, offering a very harmonious medium-high body structure. The finish is persistent, marked by red fruit and a pleasant aftertaste.

4. Pairing and Serving Recommendation

High Mexican Cuisine: Due to its balance of fruit and acidity, it is an extraordinary companion for a Chile en Nogada, highlighting the sweetness of the fruit and the creaminess of the walnut.

Classic Dishes: Wild mushroom risotto, three-meat lasagna, roasted duck with red fruit reduction, or 'puntas de res al albañil' (beef tips).

Mild Cheeses: Aged Gouda, Fontina, Edam, or goat cheeses with ash.

Serving Protocol: Serve between **16°C and 18°C**. It does not require prolonged decanting, but it will appreciate 10 minutes of aeration in a glass to express its cocoa notes.

Frequently Asked Questions (FAQ)

What type of soil influences this Merlot?

It is grown primarily in basaltic soils. This volcanic component helps retain heat moderately, providing a mineral depth that balances the natural softness of Merlot.

What is its aging potential?

This wine is designed to be enjoyed young and vibrant, although its structure allows for optimal aging of **4 to 6 years** under adequate conditions.
