Tabor Winery's Adama (Earth) series explores the intimate connection between the vine and the subsoil of Upper Galilee. This Merlot comes from vineyards planted in basaltic soils, whose porosity and mineral richness allow for balanced ripening. The result is a wine that defies varietal stereotypes: it is silky and amiable, but with a core of volcanic energy and a freshness that invites further drinking.
