The Enigma of Favorita and the Brilliance of Vermentino

The Vermentino grape is the undisputed queen of the Mediterranean coast, but its history takes a fascinating turn when crossing the Maritime Alps inland. In Piedmont, this variety is known as Favorita. Although genetically identical, geographical isolation in the Roero and Langhe hills has endowed Favorita with a firmer structure and pungent acidity, moving away from marine salinity to embrace floral and nutty notes.

Vermentino has a natural affinity for granitic and poor soils. According to studies by the Vitis International Variety Catalogue, its thick skin allows it to thrive under the intense sun of Tuscany and Liguria, maintaining a citrus freshness that is the envy of other Italian white wines.

Aging Potential and Lees

Although associated with young consumption, the best expressions of Favorita spend months in contact with their fine lees. This gives it a creaminess that balances its characteristic almond bitterness. These are whites with the soul of reds, capable of evolving nobly in the bottle for 3 to 5 years.

Technical Service Protocol

Recommended Temperature and Glasses

For a young and saline Vermentino, a strict temperature of 8°C in a medium-opening glass is recommended. For a fuller-bodied Piedmontese Favorita, raising the serving temperature to 10°C allows the aromas of white peach and aromatic herbs to fully express themselves without being anesthetized by excessive cold.

Precise Gastronomic Harmony

Its mineral profile makes it the ideal partner for Ligurian cuisine (pesto genovese), grilled seafood, and rock fish. Favorita, on the other hand, harmonizes masterfully with light poultry dishes and asparagus risottos, where its acidity cleanses the palate after each bite.
