Franz Haas
Alto Adige • Südtirol • High-Altitude Viticulture
"In the heart of South Tyrol, Franz Haas defies the limits of altitude to create wines of unparalleled alpine purity. Each bottle is a synergy of contemporary art and oenological precision."
Extreme Viticulture and the Legacy of Pinot Nero
The Franz Haas winery, established in 1880 and now led by the seventh generation, represents the pinnacle of elegance in the Alto Adige DOC appellation. Facing the challenge of global warming, the Haas family pioneered moving their vineyards to extreme altitudes, reaching 1,150 meters above sea level in the towns of Montagna and Aldino. This location guarantees a wide temperature range that preserves the malic acidity and phenolic complexity of Pinot Nero (Blauburgunder).
At La Cava Shop, we highlight Franz Haas for its ability to produce reds with Burgundian verticality and whites with sharp minerality. Its mastery of the Pinot Noir grape has been validated by Wine Searcher rankings, placing its labels among the most sought-after in Northern Italy.
The Pinot Nero Schweizer
Derived from a selection of high-density clones, this wine is a benchmark for lovers of age-worthy red wines. It presents an aromatic palette of black cherries, forest floor, and a silky tannic texture that evolves magnificently over a decade.
Manna: The Signature Blend
A cuvée that breaks paradigms by combining Riesling, Chardonnay, Gewürztraminer, and Kerner. It is a fundamental piece in our premium white wines section, standing out for its volume on the palate, unctuousness, and an aging capacity atypical for alpine whites.
Sommelier Protocol
Oxygenation and Service Management
For Pinot Nero Schweizer, a minimum decanting of 45 minutes at a temperature of 16°C is recommended. Complex whites like Manna should be served at 12°C, avoiding excessive cold to prevent blocking their complex hydrocarbon structure and floral notes, following the guidelines of Südtirol Wein.
Mountain Gastronomic Harmony
The high volcanic acidity of these soils harmonizes with small game, noble poultry, and river fish. Manna is the historical companion to spicy Eastern cuisine dishes or mild blue cheeses.
