Extreme Viticulture and the Legacy of Pinot Nero
The Franz Haas winery, established in 1880 and now led by the seventh generation, represents the pinnacle of elegance in the Alto Adige DOC appellation. Faced with the challenge of global warming, the Haas family pioneered moving their vineyards to extreme altitudes, reaching 1,150 meters above sea level in the villages of Montagna and Aldino. This location guarantees a significant diurnal temperature variation that preserves the malic acidity and phenolic complexity of Pinot Nero (Blauburgunder).

For Pinot Nero Schweizer, a minimum decantation of 45 minutes at 16°C is recommended. Complex whites like Manna should be served at 12°C, avoiding excessive cold to prevent blocking their complex hydrocarbon structure and floral notes, following the guidelines of Südtirol Wein.
