Its technical importance lies in its thick skin and resistance to botrytis, essential characteristics for the appassimento process. According to the Consorzio Valpolicella, Corvina contributes the elegance, acidity, and black cherry fruit notes that define the region's great red wines.

Serving and Oxygenation
A classic Corvina-based Valpolicella should be served at 16°C. However, versions obtained through appassimento (Amarone or Recioto) require 18°C and prior decanting. The phenolic structure of these wines needs time to reveal their notes of cocoa, tobacco, and oriental spices.
