The Winery That Transcends Time

Ximenez-Spínola is not just a winery; it is the guardian of a family tradition that since 1729 defies conventions in the Jerez region. Being the only house dedicated exclusively to the Pedro Ximénez grape, its elaborations are limited editions that move away from mass production to seek oenological excellence.

Old Harvest represents a milestone in Spanish viticulture. It is a historical "assemblage" wine, where soleras with an average of 17 years of oxidative aging are selected. The result is a fortified wine that preserves the infinite unctuousness of its origin, but with a verticality and elegance unusual for its varietal.

Gentle and unctuous attack. The sweetness is subtle and quickly gives way to a vibrant acidity and a dry, saline, and infinitely mineral finish.
