The Winery That Transcends Time

Ximenez-Spínola is not just a winery; it is the guardian of a family tradition that has challenged conventions in the Jerez Region since 1729. As the only house exclusively dedicated to the Pedro Ximénez grape, its elaborations are limited editions that move away from mass production to seek oenological excellence.

The Old Harvest represents a milestone in Spanish viticulture. It is a historic "blend" wine, where soleras with an average of 17 years of oxidative aging are selected. The result is a generous wine that preserves the infinite smoothness of its origin, but with a verticality and elegance uncharacteristic of its varietal.

Oxidative aging in American oak barrels under the traditional solera system.

Organoleptic Analysis

Appearance

Deep amber color with copper reflections and iodized rim. Its density is revealed in a persistent and elegant tear.

Nose

Extreme complexity: notes of Corinthian raisins and dried figs that evolve into toasted hazelnuts, noble woods, and a hint of fine cabinetmaking.

Palate

Gentle and unctuous attack. The sweetness is subtle and quickly gives way to a vibrant acidity and a dry, saline, and infinitely mineral finish.

How to serve Old Harvest to appreciate its complexity?

It is recommended to serve slightly chilled, between 12°C and 14°C. Use a wide-bodied white wine glass to allow oxygenation to release the aromas of noble wood.

What are the recommended food pairings?

Its semi-dry profile makes it ideal for pairing with cured cheeses, foie gras, toasted nuts, and dark chocolate desserts. It is, above all, a meditation wine.
