Exceptional Harvest
Ximénez-Spínola | Pedro Ximénez
"The challenge to oenological logic: a white wine that deceives the senses with its honeyed nose and its structured, unctuous and dry palate."
Innovation and Purity in Jerez
Exceptional Harvest is Ximénez-Spínola's most personal interpretation. This wine breaks the mold by using Pedro Ximénez grapes with three weeks of overripening on the vine, but vinified to dryness. Aged on lees in barrels that previously held the house's sweet gems, it achieves unprecedented complexity: an aromatic explosion that suggests sweetness, but delivers superb elegance and a glyceric, deep, and absolutely dry palate.

2. Sommelier's Notes
Appearance: Intense golden yellow color with amber flashes. Shows very marked and persistent glyceric legs.
Nose: A fascinating sensory deception. Intense notes of dried figs, dried apricots, acacia honey, and withered white flowers over a mineral and fine woodworking background.
Palate: Broad, unctuous, and almost fleshy entry. Its dry character is surprising, and its perfectly integrated acidity refreshes the palate. Very long aftertaste that brings back notes of overripe fruit.
