Exceptional Harvest
Ximénez-Spínola | Pedro Ximénez
"Challenging enological logic: a white wine that deceives the senses with its honeyed nose and a structured, unctuous, dry palate."
Innovation and Purity in Jerez
Exceptional Harvest is Ximénez-Spínola's most personal interpretation. This wine breaks the mold by using Pedro Ximénez grapes with three weeks of overripening on the vine, but vinified to dryness. Aged on lees in barrels that previously held the house's sweet treasures, it achieves unprecedented complexity: an aromatic explosion that suggests sweetness, but delivers superb elegance and a glyceric, deep, and absolutely dry mouthfeel.

2. Sommelier's Notes
Appearance: Intense golden yellow with amber hues. Presents very marked and persistent glyceric tears.
Nose: A fascinating sensory deception. Intense notes of dried figs, dried apricots, acacia honey, and withered white flowers over a mineral and noble wood background.
Palate: Broad, unctuous, and almost fleshy entry. Its dry character and perfectly integrated acidity, which refreshes the palate, are surprising. Very long aftertaste returning notes of overripe fruit.
