Fino Serie 3 is one of Ximénez-Spínola's most exclusive pieces. Breaking with the secular tradition of using Palomino, the winery presents this Fino made entirely with Pedro Ximénez grapes. After a complete fermentation that eliminates all traces of sugar, it develops a natural flor veil in oak barrels. This limited release represents a tireless search for varietal purity in its freshest, driest, and most biological aspect.

Appearance: Pale straw yellow, extremely clean and bright, with subtle greenish reflections characteristic of lively biological aging.
Nose: Intense and clean. It displays notes of yeast, bread crust, and bitter almond, integrated with nuances of ripe white fruit and the unique herbaceous character provided by dry-vinified Pedro Ximénez.
Palate: Sharp, vertical, and extraordinarily dry on entry. It presents a very marked saline sapidity with astonishing persistence. Clean finish with hints of nuts and mineral freshness.
