Pago de Vallegarcía
Montes de Toledo • Vino de Pago • Spain
"The pinnacle of Spanish viticulture: where the elegance of Bordeaux style and the untamed typicity of the Montes de Toledo converge in every glass."
01. The Unique Terroir of the Rañas
Located in Retuerta del Bullaque, under the direct influence of the Cabañeros National Park, Pago de Vallegarcía represents a milestone in modern viticulture. Its 31 hectares of own vineyards rest on rañas soils, a geological deposit of quartzite pebbles and acidic clays that impart vibrant minerality and a unique structure to the wines within our selection of Spanish wines.
As a prominent member of the Grandes Pagos de España association, the winery advocates the concept of a single estate, where the continental climate and the altitude of 850 meters allow for slow and balanced ripening of noble varieties such as Petit Verdot and Viognier.
02. Icons of Pago de Vallegarcía
Hipperia: The Perfect Blend
It is the flagship red wine of the house. A masterful blend that usually integrates Cabernet Sauvignon, Merlot, Petit Verdot, and Cabernet Franc. Recognized by critics such as James Suckling, Hipperia stands out for its elegance, depth, and exceptional aging potential.
Viognier: A Cult White
Considered one of the best representatives of this variety in the world, outside of its French origin. This white wine offers a creaminess and aromatic profile of stone fruits that experts from Jancis Robinson have praised for its freshness and volume on the palate.
Syrah: Expression of Quartzite
Our Vallegarcía Syrah is the pure definition of terroir. Spicy, floral, and with intense fruit, it faithfully reflects the untamed personality of the Montes de Toledo.
Collector's Guide
What does the Vino de Pago certification grant to Vallegarcía?
It is the highest echelon in the Spanish quality pyramid. According to the Ministry of Agriculture, Fisheries and Food, this category ensures that the grape comes exclusively from an estate with unique characteristics and superior production processes. At LA CAVA SHOP, we select Pago de Vallegarcía precisely for this qualitative consistency.
How to store a Hipperia for aging?
To honor its aging potential of 10 to 15 years, it must be kept at a constant temperature of 14°C-16°C, in darkness and with controlled humidity. For further information on caring for high-end bottles, we recommend WSET Global certifications.
