BLANC 2021
DOMAINE DE BOISSEYT • HERMITAGE AOC • FRANCE
"The aristocracy of the Rhône: a wine of overwhelming nobility, where time stands still before the majesty of Marsanne."
The Legend of the White Hill
Hermitage Pilum Blanc 2021 is a collector's gem from Domaine de Boisseyt. Produced on the emblematic Hermitage hill, France, this wine is the result of a unique terroir of granite and glacial deposits. "Pilum" does not seek lightness, but balanced opulence. It is a white with a red wine's soul: full-bodied, structured, and with a complexity that unfolds in infinite layers. The 2021 vintage brings a masterful freshness that guarantees historical longevity.

4. Pairing and Gala Service
Gastronomy: A wine for the most discerning table. It pairs sublimely with buttered lobster, veal sweetbreads, Bresse poultry with cream and white truffle, or fatty fish like turbot with complex sauces.
Serving: Serve between **12°C and 14°C** (not too cold so as not to dampen its complexity). Decanting 30 minutes before serving in large, high-end white wine glasses is strongly recommended.
Technical Sheet and Frequently Asked Questions (FAQ)
Why is this white wine so expensive?
Hermitage is one of the smallest and most prestigious appellations in the world. The scarcity of white parcels (only a small percentage of the hill) and manual labor on extreme slopes justify its cult value.
Is it better to drink it young or age it?
Pilum 2021 is delicious now for its energy, but great Hermitage Blancs go through a "closed" phase at 5 years, only to be reborn at 10 with notes of truffle and honey. It is a wine for patience.
What does 'Pilum' mean?
Pilum refers to the Roman javelin, symbolizing the rectitude, strength, and ancient history underlying the Rhône vineyards, cultivated since imperial times.
