MASTER AND SERVANT

CABERNET SAUVIGNON • NAPA VALLEY

"The mastery of Californian Cabernet: a perfect duality between the untamed power of the terroir and the oenological elegance of 689 Cellars."

The Balance of Forces

A conceptual creation by 689 Cellars that explores the relationship between the winemaker ("Master") and nature ("Servant"). A technical balancing act that delivers structural strength for aging and a polished texture designed for immediate enjoyment.

1. Identity Profile

Winery: 689 Cellars

Origin: Napa Valley, California, USA

Aging: 12 months in French and American Oak

Composition: Premium Cabernet Sauvignon

Presentation: 750 ml

2. Sensory Experience

Appearance: Deep ruby red with intense garnet hues. Impeccable brilliance and great density.

Nose: Aromas of blackcurrant and ripe blackberry, intertwined with tobacco, cedar, and a hint of bitter cocoa.

Palate: Imposing structure. Firm, masterfully polished tannins that lead to a long and persistent finish.

3. Style Analysis

Mexican Accent: A sublime pairing with Oaxacan Black Mole or slow-cooked Hidalgo Barbacoa.

Recommendation: Decant for 30 minutes. Serve between 16°C and 18°C (61°F and 64°F).

Frequently Asked Questions (FAQ)

What does the name "Master And Servant" mean?

It symbolizes the interaction between man (the master) guiding winemaking and the land (the servant) providing the untamed fruit.

Is this a wine to drink now or to keep?

Although its polished tannins allow it to be enjoyed today, its classic Napa Valley structure promises favorable evolution in the cellar for the next 8 to 10 years.
