Recaredo Terrers 2019
Brut Nature • Corpinnat, Spain
"The essence of the Mediterranean in its purest state: a terroir sparkling wine, born from calcareous vineyards, with extreme aging and brutal honesty."
Landscape in Bubbles
Recaredo Terrers is the definition of rigor and respect for the land. This Brut Nature is not just a sparkling wine; it's a liquid interpretation of the calcareous soils of Alt Penedès. Produced under the strict precepts of biodynamic agriculture, it stands out for its very long aging of 39 months and the use of natural cork during aging on its lees. A vertical, dry, and deeply mineral wine that foregoes any artifice to showcase the nobility of Xarel·lo.

2. Sommelier's Notes
Appearance: Straw yellow color with vibrant golden reflections. Displays very fine, constant, and perfectly integrated bubbles that denote its noble maturity.
Nose: Suggestive aromas of ripe white fruit and wild flowers. Its evolution reveals complex notes of rye bread, toasted nuts, and a marked mineral-calcareous background.
Palate: Sober, direct, and balanced entry. Creamy-textured and highly vertical carbonation. Its freshness is pungent and leads to an extremely dry, long finish with a persistent Atlantic salinity.

4. Pairing and Service
Haute Cuisine: Ideal for acorn-fed Iberian ham, rock seafood, natural oysters, or white fish in butter sauce.
Poultry and Rice Dishes: Masterfully accompanies rice with pigeon, roasted free-range chicken, or wild mushroom risottos.
Service: Enjoy between 8°C and 10°C. We recommend serving in a white wine glass to allow its aromatic complexity to fully open.
5. Certifications and Commitment
Recaredo is a pioneer in biodynamic viticulture in Spain, holding Demeter certification. Their commitment to the terroir includes the use of animal traction, manual harvesting, and manual disgorgement without freezing, an ancient technique that preserves the absolute purity of the wine. Terrers is, above all, a tribute to the spirit of the land.
