DEBOUT SUR LES CRÊTES
VINTAGE 2021

DOMAINE DE BOISSEYT • NORTH RHÔNE • FRANCE

"The verticality of air: a white wine born where the slopes touch the sky, offering a mineral freshness and unattainable purity."

🇫🇷 ORIGIN: CHAVANAY, NORTH RHÔNE | ⛰️ HIGH-ALTITUDE VINEYARDS | ✨ PRECISION WINEMAKING

Elegance at the Summit

Debout sur les Crêtes 2021 is Domaine de Boisseyt's tribute to the most extreme terroirs of France. Located on the granitic ridges of Chavanay, these vineyards benefit from perfect sun exposure and constant ventilation that slows down maturation, concentrating aromas without losing acidity. The result is a white wine of extreme finesse, where the structure of Marsanne blends with the delicate aromatic qualities of Roussanne.

1. Identity Profile

Specific Origin: Chavanay ridges, Northern Rhône, France.

Domain: Domaine de Boisseyt.

Vintage: 2021.

Varietals: Marsanne and Roussanne.

Soil: Degraded granite on exposed ridges.

Aging: Aged in tanks and a small portion in barrels to preserve mineral tension.

Volume: 750 ml.

2. Sommelier's Notes

Appearance: Pale straw color with silver highlights, very bright.

Nose: Very fresh notes of orange blossom, jasmine, and green apple. A hint of white peach appears, along with a distinct sensation of wet stone (minerality).

Palate: A taut and vibrant wine. The acidity is crystalline and guides the palate, revealing refined citrus flavors and a very persistent saline finish that leaves an absolutely clean sensation.

4. Recommended Pairing and Service

Gastronomy: Its vertical profile makes it ideal for fresh seafood (oysters, scallop carpaccio), grilled white fish with lemon, sushi, and light Asian preparations. It's a high-class aperitif.

Service: Serve well chilled, between **8°C and 10°C**. It does not require decanting, but benefits from a tulip-shaped glass to concentrate its delicate high-altitude aromas.

Technical Sheet and Frequently Asked Questions (FAQ)

Is this white wine very different from 'Les Garipellées'?

Yes. While 'Les Garipellées' aims for a more classic and slightly richer expression, 'Debout sur les Crêtes' focuses on the absolute freshness and tension provided by the higher altitude of its plots.

How did the 2021 vintage affect this wine?

2021 was a cooler vintage in the Rhône, which greatly favored white wines, enhancing their aromatic profile and maintaining very vibrant natural acidity.

Does it have aging potential?

Although its main charm is its youthful energy, its acidity will allow it to evolve elegantly over the next 3 to 5 years, developing nutty nuances.
