The region of Puglia (Apulia) has moved beyond being a giant of bulk production to lead the segment of boutique wines in Italy. Its soils, technically known as Terra Rossa (rich in iron oxide and with a calcareous base), allow for exceptional drainage and mineral concentration, which translates into longevity and body.

At La Cava Shop, our curation focuses on leading wineries like Tenute Girolamo, which manage to tame the southern sun to offer an elegant and balanced Primitivo di Manduria. According to the Consorzio di Tutela del Primitivo, the microclimate of the Salento peninsula, surrounded by the Adriatic and Ionian seas, is vital for refreshing the vineyards during the nights, allowing for perfect phenolic ripening.
