Through the DOC Sicilia, local wineries have rescued forgotten native varieties, opting for finesse, terroir identity, and a minimal intervention viticulture that competes with the world's most prestigious regions.

2. Geography of Sicilian Flavor

Etna DOC: Heroic Viticulture

Located on the slopes of Europe's highest active volcano, the Etna DOC appellation is the epicenter of current cult viticulture. Its vineyards, planted at altitudes challenging 1,000 meters above sea level, root themselves in superimposed layers of solidified lava, ash, and lapilli.

The wines made in this natural cellar stand out for unparalleled complexity: reds made with Nerello Mascalese, pale in color but with noble tannins and hints of gunpowder, soot, and wild fennel; and whites from the Carricante variety, valued for their citrus tension and an electric salinity that makes them practically immortal in the bottle.

The Southwest and the Exuberance of Grillo and Nero d'Avola

Far from the direct influence of the volcano, the coastal plains and hills of southwestern Sicily receive warm breezes from North Africa. Here, renowned wineries dominate the cultivation of the white grape Grillo, producing unctuous, round, and aromatic whites with notes of peach and orange blossom. Likewise, the island's quintessential red grape, Nero d'Avola, expresses itself in this area with all its opulence of ripe black fruits, licorice, and sweet, silky tannins.

Pairing with Sicilian Cuisine

The island's gastronomy is a canvas where Arab, Greek, Spanish, and Italian influences intersect. Fresh whites from Frappato (a subtle and floral red often drunk chilled like a white) and Grillo are ideal companions for the classic Caponata of eggplants or sardines à la beccafico.

What is the aging potential of Etna wines?

Due to their intrinsic high acidity, solid tannic structure, and volcanic minerality, great reds based on the Nerello Mascalese grape from old vine parcels can evolve magnificently in the bottle for 10 to 15 years, developing complex tertiary aromas of leather, truffle, and tobacco.

At what temperature should Sicilian reds be served?

It depends on the style. A structured Nero d'Avola shines between 16 °C and 18 °C. However, a subtle, fresh, and fruity red like Frappato is much more enjoyable when served slightly chilled, at about 12 °C-14 °C, which highlights its youthful character, floral aromas of violets, and refreshing profile.

Why are Sicilian wines associated with the concept of 'saline wines'?

Many of the island's best vineyards are exposed to constant sea winds that deposit microparticles of sea salt on the grape skins. This phenomenon, combined with minerals extracted from volcanic and calcareous soils, provides a very refreshing salty and sapid finish, especially noticeable in white wines from Grillo and Carricante.
