Attis Mar
Underwater Albariño 2023 • Ría de Arousa
"The essence of the Atlantic in its purest state: a signature Albariño that rests under the waters of the Ría de Arousa, achieving a fascinating evolution where salinity and freshness merge into unparalleled marine harmony."
Viticulture under the Ocean
Attis Mar is one of the winery's most ambitious projects. After traditional aging on lees on land, the bottles are submerged 12 meters deep in the heart of the Ría de Arousa. There, constant pressure, absence of light, and the gentle sway of marine currents accelerate the maturation process in a noble way, polishing the acidity and imbuing the wine with an iodized salinity that seems to spring directly from the depths.

2. Sommelier's Notes
Appearance: Intense straw yellow color with brilliant golden reflections. Its evolution under the sea gives it a greater chromatic depth than conventional Albariños.
Nose: Complex and mystical bouquet. Notes of ripe white fruit (pear and loquat) intertwine with iodized nuances, pure sea breeze, and an elegant fine lees background that brings back memories of bakery.
Palate: Broad, enveloping, and very unctuous entry. Underwater pressure transforms the acidity into a creamy freshness. The finish is extraordinarily long, markedly saline and mineral.

5. Frequently Asked Questions (FAQs)
Why is the wine aged underwater?
The sea offers conditions impossible to replicate on land: higher atmospheric pressure, constant temperature, total darkness, and kinetic movement generated by the tides that integrates the lees masterfully.
Does sea salt filter into the bottle?
No, the wine is hermetically sealed. The perceived salinity is the result of the Albariño varietal's expression, enhanced by the physical evolution the wine undergoes under oceanic pressure.
