MT. TABOR
VIBRANT SHIRAZ

GALILEE • ISRAEL • KOSHER MEVUSHAL

"Mediterranean Expression: a vibrant and spicy Shiraz that captures the energy of the Galilean terroir in a fresh, juicy, and deeply contemporary style."

★ ★ ★ ★ ★ | 4.7/5 (QUALITY AND FRESHNESS GUARANTEED)

The Vitality of Galilee Shiraz

The Mt. Tabor Shiraz is an ode to the youth of the Israeli vineyard. Crafted by Tabor Winery under a philosophy of minimal intervention, this wine avoids the heaviness of excessive oak to prioritize the explosion of pepper and black fruit that defines the varietal in Mediterranean climates. It is a dynamic red, designed for those seeking an honest, expressive wine with the innate elegance of Upper Galilee.

1. Identity Profile

Winery: Tabor Winery.

Origin: Galilee, Israel.

Varietal: 100% Shiraz (Syrah).

Vinification: Fermentation in stainless steel to preserve fruit intensity.

Aging: Brief oak contact to polish tannins without overshadowing freshness.

Alcohol: 13.5% - 14% Alc. Vol.

Format: 750 ml

2. Sommelier's Notes (Sensory Experience)

Appearance: Deep purplish-red color with electric purple rims, denoting vibrant youth and healthy concentration.

Nose: Offers an explosion of ripe black fruits (blackberries, blueberries), followed by classic varietal notes: freshly ground black pepper, licorice, and a subtle floral hint of violets with a slightly smoky finish.

Palate: Juicy and balanced entry. Tannins are soft and round, with a medium body that fills the palate with spicy flavors. Its natural acidity provides a refreshing and persistent finish.

4. Pairing and Gastronomic Recommendation

Urban Cuisine and Marinades: An extraordinary companion for Tacos al Pastor or meats marinated in dried chili adobos, where the wine's spiciness highlights the annatto and smokiness.

Grilled: Ideal for lamb skewers with cumin, gourmet burgers with blue cheese, or an informal northern barbecue.

Mediterranean Flavors: Roasted eggplant, hummus with spiced meat, or sourdough pizzas with spicy sausages.

Serving Protocol: Serve between 16°C and 18°C. Its young profile does not require decanting, but airing it for 5 minutes in the glass enhances its floral aromatic range.

Frequently Asked Questions (FAQ)

Why choose a Shiraz from Israel?

Israel offers an ideal Mediterranean climate for Shiraz, similar to the Rhône Valley but with a luminosity that brings out darker and juicier fruits. Tabor Winery adds sustainable viticulture that respects the natural cycle of the grape.

How long can I store it?

Although its charm lies in its current freshness, it can evolve favorably in a cellar for the next 2 to 4 years, gaining more earthy and softer notes.
