Manzanilla La Especial 2016 breaks with the traditional soleras system to offer a liquid testimony of a specific year. Aged under an uninterrupted veil of flor for more than 6 years without "rocíos" or blends, this "pasada" manzanilla, aged over time, offers a structural depth and pungent elegance reserved only for Valdespino's collection pieces. It is the perfect balance between the chalk of the albariza and the sea breeze.

Appearance: Intense golden yellow with straw and coppery reflections. Bright with notable glyceric density in the glass.
Nose: Powerful, complex, and evolving. Notes of bitter almond, dry yeast, chamomile, and sea breeze. Distinct notes of chalk and a subtly smoky background from its long stay in the barrel stand out.
Palate: Forceful, vertical, and extremely dry entry. Salinity is the main protagonist, accompanied by a unctuous yet vibrant texture. Extreme mineral, dry, and very persistent finish.
