Finca Calvestra 2022
Merseguera • DOP Pago El Terrerazo
"The pinnacle of Merseguera: a cult wine that defies Mediterranean conventions. Toni Sarrión achieves masterful complexity through acacia aging, respecting the purity of the fruit and giving it astonishing longevity."
High-Altitude Purity and Calcareous Soil
Finca Calvestra is not just a wine; it's a project of historical recovery. Situated at 900 meters of altitude in the highlands of Valencia, this single-varietal Merseguera (grafted onto old Bobal vines) redefines what a Spanish white wine can be. The calcareous soil and Mustiguillo's organic viticulture combine to offer a vertical, unctuous, and deeply mineral wine that breaks with the stereotype of warm-climate white wines from the region.

2. Sommelier's Notes
Appearance: Straw yellow color with brilliant golden reflections. It presents as clean and with a visual density that anticipates its unctuousness.
Nose: Unfolds layers of orange blossom honey, dried fruits, and fennel, all enveloped in a calcareous minerality reminiscent of chalk. The floral background is distinctive and elegant thanks to the acacia wood.
Palate: Powerful, ample, and remarkably unctuous entry. It possesses an almost "chewy" structure that is perfectly balanced with a vibrant citrus acidity. The finish is saline, long, and with an aristocratic persistence.

4. Pairing and Serving
Structured Cuisine: Ideal with rock fish, seafood stews, white meats with creamy sauces, and dishes flavored with white truffle.
Cheese Selection: Aged sheep cheeses and pressed-paste cheeses find the perfect unctuous counterpoint in this wine.
Serving: It is recommended to enjoy between 10°C and 12°C. It benefits from brief aeration in the glass to allow its aromatic complexity to fully open.
5. Why is it an exceptional white?
Finca Calvestra represents heroic viticulture in a Mediterranean environment. By rising to 900 meters, the Merseguera grape retains a freshness that does not exist on the plains. The strategic choice of acacia wood avoids the classic toastiness of oak, allowing the varietal to express itself with a purity and verticality that places it among the most exclusive white wines of the peninsula.
