Rosé Wine has transcended its seasonal trend status to establish itself as an essential pillar in the cellar of any collector and enthusiast. According to technical reports prepared by the International Organisation of Vine and Wine (OIV), global demand for high-end rosés has experienced sustained growth thanks to their incomparable sensory profile: the agility and electric acidity characteristic of whites combined with the complexity, volume, and texture of reds.

At La Cava Shop, our curation ranges from the most delicate varietals of Grenache, Cinsault, and Syrah from French Provence, to audacious proposals made with Nebbiolo, Sangiovese, and Tempranillo in the wine valleys of Mexico and Spain.

Production Methods: Pressing vs. Saignée

The chromatic and tactile palette of rosé is strictly linked to the technique used by the winemaker during vinification:

  • Direct Pressing (Pressée): Red grapes are gently pressed immediately. The contact of the must with the skins lasts only a few minutes or hours, resulting in pale pink, onion skin, or salmon tones, accompanied by fresh acidity and floral notes.
  • Saignée Method: The must is macerated with the skins for several hours before part of the liquid is removed ("bled off"). The result is wines with a more intense ruby or cherry color, higher alcohol concentration, polished tannins, and pronounced hints of raspberry, wild strawberry, and pomegranate.

Pairing: The Perfect Gastronomic Wildcard

Due to its versatile nature, rosé wine is recognized by institutions such as the WSET as the ultimate wildcard at the table. It is the ideal companion for fine Mexican cuisine and international dishes:

  • Light and Mineral Rosés: Harmonize perfectly with citrus-marinated ceviches, fresh seafood, goat cheese salads, tuna tartare, and sushi.
  • Structured Rosés (Saignée / Oak-aged): Their volume compensates for fats and spices in dishes such as chiles en nogada, tacos al pastor, mixed paella, glazed poultry, and pasta with creamy sauces.

At what temperature should rosé wine be served?

To enjoy its crisp acidity and floral aromas, serve between 8°C and 10°C. If the wine has more body or barrel aging, serve it at 12°C in medium-bodied glasses.

What is the difference between a pressed rosé and a saignée rosé?

Direct pressing yields wines of pale color and refreshing lightness (Provence style), while saignée produces labels with more vivid color, greater body, and aromatic volume.

How long can a bottle of rosé wine be stored?
