"Commitment and purity: the most natural expression of Ribera del Duero. A wine that captures the vibrant essence of Tinta del País, balancing exuberant red fruit with conscious viticulture."
The Earth's Manifesto
Protos Organic represents the winery's evolution towards a low-intervention viticulture. Born from certified plots where respect for biodiversity is the priority, this wine is fermented exclusively with indigenous yeasts. Its 9-month aging in oak barrels does not seek to dominate, but to accompany the purity of the fruit, offering an honest, fresh, and deeply connected profile to the roots of Peñafiel.

4. Pairing and Organic Recommendation
Conscious Gastronomy: Pairs perfectly with plant-based dishes such as eggplant moussaka, mushroom lasagna, or legume stews with Mediterranean spices.

Mexican Cuisine: Exceptional with steak tacos, artisanal cheese crusts, Yecapixtla cecina (dried beef), or blue corn sopes.

Frequently Asked Questions (FAQ)
What does it mean that it contains indigenous yeasts?
It means that fermentation is carried out with the yeasts naturally present on the grape skins in the vineyard, avoiding the use of commercial strains. This gives the wine a unique and unrepeatable personality for each vintage.
Does organic wine contain sulfites?
Yes, organic wines contain sulfites (some naturally from the fermentation process), but the limits allowed by certification are significantly lower than those for conventional wines.
