Technical Sheet and Frequently Asked Questions (FAQ)
What makes the Judean Hills unique?
The combination of terra rossa and limestone soils, along with the Mediterranean sea breeze clashing against the mountains, creates a cool microclimate ideal for age-worthy wines with great acidity.
Why choose a Non-Mevushal wine like Elyone?
By avoiding the heating process, the wine retains its natural enzymes and phenolic compounds intact, allowing the wine to evolve and improve over the years in the cellar, something vital for a premium blend.
Is it suitable for vegetarians?
Yes, the clarification processes at Nadiv are carried out under Kosher standards that do not use forbidden animal by-products, making it suitable for a vegan/vegetarian lifestyle.
