Recaredo Serral del Vell is one of the most prestigious sparkling wines on the Iberian Peninsula. Originating from a calcareous hillside in Alt Penedès, this wine represents a total commitment to biodynamic viticulture and patience. With a minimum aging of 5 years (60 months), this Brut Nature is produced under the Corpinnat seal, guaranteeing manual harvesting and complete vinification on the property. It is a sparkling wine that redefines elegance through maturity and absolute respect for the landscape.

Appearance: Intense and luminous golden yellow color. Exceptionally fine and slow-rising bubble, perfectly integrated into the whole.
Nose: Noble and deep profile. Notes of roasted yellow fruit and quince, evolving into nuances of fine pastry, toasted nuts, and a very characteristic mineral saline background from its calcareous soils.
Palate: Powerful entry, with texture and volume. It shows an enveloping creaminess balanced by a sharp citrus freshness. Dry finish (Zero Dosage), long and with persistent elegance.

4. Pairing and Serving
Hearty Dishes: Rich fish stews (suquet de peix), baked cod, or mountain rice with mushrooms.
Haute Cuisine: Pan-seared foie gras, roasted suckling pig, or truffled white meats.
Serving: It is recommended to serve between 10°C and 12°C (50°F and 54°F). Due to its long aging, it should not be served excessively chilled to avoid inhibiting its complexity.

Recaredo was a pioneer in leaving the Cava D.O. to found Corpinnat, a collective brand that demands much stricter requirements: 100% organic viticulture, manual harvesting, vinification on the property, and minimum aging of 18 months.
