Valdespino Palomino Barrel Fermented 2024
The White Nobility of Pago de Macharnudo

"The reinvention of Palomino: Valdespino Barrel Fermented captures the purest and freshest expression of Pago de Macharnudo through artisanal fermentation in barrels that previously held its best Finos. A white wine with a Jerez soul and a contemporary profile."

1. Identity Profile

  • Winery: Valdespino (Grupo Estévez)
  • Origin: Pago de Macharnudo, Jerez, Spain (Albariza soils).
  • Varietal: 100% Palomino Fino.
  • Vinification: Fermented in 500L American oak butts (formerly used for Fino) with fine lees stirring.
  • Volume: 750 ml | Vintage: 2024

2. Sommelier's Notes

Appearance: Straw yellow with greenish reflections, clean and bright.

Nose: Aromas of pear, apple, and citrus. Subtle wood with hints of vanilla, toasted sesame, and a smoky mineral background (chalk soil).

Palate: Broad and structured entry. Enveloping creaminess balanced by pungent acidity and a persistent saline finish.

3. Style and Uniqueness

Minerality: Albariza [ ● ● ● ● ● ]

Creaminess: Lees [ ● ● ● ● ○ ]

Freshness: Citrus Nerve [ ● ● ● ● ○ ]

4. The Art of Serving

  • Food Pairing: Soupy rice dishes, grilled seafood, poultry, and sushi/sashimi.
  • Temperature: Serve between 9°C and 11°C in a medium white wine glass.

5. Why is this white wine a gem?

Expression of the Pago: Macharnudo is the 'Grand Cru' of Jerez. This wine enhances the fruit and minerality without the flor, achieving a masterful balance. Its structure gives it excellent potential for evolution in the bottle for 2-3 years.
